While I often drink fennel tea, the number of dishes I can cook that include fennel is rather limited. I once ate a potato-fennel bake, which I found incredibly delicious, and which I then made at home. It was also quite nice, but too heavy on the fennel, so I skipped this. My husband likes fennel a lot, but only raw. So the other day I brought some home from the supermarket, planning to make fennel salad for lunch that Saturday. He really enjoyed this salad.

Ingredients:
1 fenell bulb, washed and shredded into thin slices (I used a potato peeler)
1 tbsp olive oil
2 tbsp vinegar
chopped parsley
30g parmesan (shredded) (ommit for a vegan option)
salt and pepper to taste
assortment of roasted nuts (I used pumpkin seeds, cashew and pecan nuts as well as salted almonds, which went well with the fennel)

Place the fennel slices into a large bowl, cover with the roasted nuts.02 Fennel Salad kl
In a small bowl, mix the vinegar, the olive oil, the parsley and the salt and pepper into a vinaigrette. Blend the parmesan into the vinaigrette until it is smooth and even. Pour vinaigrette onto fennel slices, mix well with the help of two spoons. Serve immediately, before the fennel soaks up the vinaigrette. 01 Fennel Salad kl
